Nut Butter Cookies! They're gluten-free, flour-free, easy and delicious. Plus they whip up fast and cook in 6 minutes. Use any nut butter you like; homemade nut butter works great.

INGREDIENTS:

  • 1.5 cup nut butter, any variety
  • 1/3 to 1/2 cup maple syrup, honey or sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Handful of chocolate chips or cacao nibs
  • Optional: toppings such as chocolate covered hazelnuts

DIRECTIONS:

  1. Mix all ingredients together
  2. Drop onto greased cookie sheet, leaving 1 to 2 inches between cookies (recipe makes about 24 cookies)
  3. Push any optional toppings into the top of each cookie
  4. Bake at 350°F (177°C) for 6 minutes
  5. Remove from oven and let cool before transferring to a cookie plate
