Nut Butter Cookies

Nut Butter Cookies! They're gluten-free, flour-free, easy and delicious. Plus they whip up fast and cook in 6 minutes. Use any nut butter you like; homemade nut butter works great.
INGREDIENTS:
- 1.5 cup nut butter, any variety
- 1/3 to 1/2 cup maple syrup, honey or sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- Handful of chocolate chips or cacao nibs
- Optional: toppings such as chocolate covered hazelnuts
DIRECTIONS:
- Mix all ingredients together
- Drop onto greased cookie sheet, leaving 1 to 2 inches between cookies (recipe makes about 24 cookies)
- Push any optional toppings into the top of each cookie
- Bake at 350°F (177°C) for 6 minutes
- Remove from oven and let cool before transferring to a cookie plate
