New Year's Smoothie Bowl
Here's an easy, festive recipe for a fabulous smoothie bowl. Enjoy it for breakfast with crepes, oatmeal or on its own, and have it anytime for a healthy snack or dessert.
SMOOTHIE INGREDIENTS:
- 1 Frozen banana cut in chunks. Fresh banana works fine too, but frozen makes the smoothie a little more ice-cream like.
- 2 cups frozen berries (raspberries, blueberries, cherries, etc)
- 3 Tbsp nut butter
- 1 to 2 cups milk (soy milk, nut milk or yogurt all work well)
- Optional: 1/4 cup strong coffee
TOPPINGS:
- Coconut flakes
- Pomegranate
- More whole fruit
- Granola
DIRECTIONS:
- Put all smoothie ingredients in blender and blend until smooth. Start with 1 cup milk and add more if needed.
- Scoop / pour into a bowl and top with toppings. Store the extra in the fridge.
